Singapore Expats

Hi All,

I am planning to set up a small restaurant but I need fresh beef to make beef balls. May I know where can I get it in Singapore? How about Johor? The meat must be freshly-cut.

Most any wet market will do.

Why would anybody want fresh local/malaysian/indonesian stringy beef when there is airflow good Aus or NZ beef? Dog knows I would eat it unless I had no choice. Have you ever eaten local beef? that why most supermarkets fly in chilled Oz beef.

What I mean by "freshly-cut" is that I need to get the beef meat immediately after they slaughtered the cow. I dont think SG has poultry farm left.

I can't use frozen beef as it is not fresh anymore. I need to use really fresh meat in order to make the food.

Do you know where can I get it?

Most of the beef here is chilled only - not frozen. And I doubt that you are going to produce anything that you can tell the difference using chilled or fresh beef once it's cooked.

Unless you are planning on making steak tartar - then just use a good cut of chilled airflown and triple grind it. Beef from Malaysia and Indonesia will not garner you any praises from anybody - guaranteed.

Question. How do you suppose they bring in Wagu or Kobe beef to Singapore?

Yeah, I agree most chefs are stubborn. No choice.

I have to look for fresh beef (not chilled/frozen). The taste will be different if we use fresh beef once it cooked.

Well, I hate to tell you this, but I grew up on a dairy farm with 150 head of cows. I've slaughtered my fair share of them and while I don't farm anymore, I've eaten enough "Fresh" beef to know that you are full if it.
Are you related to P T Barnum? Cause you might fool some of the people some of the time. But you are not fooling me. The only way you can eat beef and be able to taste the difference is if you are eating raw beef that is still warm from the steer. Even then, it's only a sensation due to the even warmth of the meat.

I don't think you get beef from a poultry farm either.

OP, why don't you go on http://www.makansutra.com/forums/singapore/index.php and ask the good people there - quite a few of them are in the industry.

I was wondering how he was going to get it from the slaughterhouse to the restaurant? Obviously not in a chilled delivery van...on the back of a truck in the sun perhaps?

Should you get beef as fresh as you hope it won't be fresh for very long unless of course you have room for a few cows (four legged ones) in your HDB apartment.
