yep definitely Disneyland and Ocean Park
For more adult oriented visits... Stanley market in Stanley is a good trade off between lively markets and the crowds ( of Mong Kok) which can be unbearable with children
The Peak is impressive

depends how long you will be there...
there are definitely more things to see and visit besides Ocean Park and Disneyland (both of course recommended to see)
We have been to Hong Kong a few times and our Kid really enjoys its versatile atmosphere. some things to consider (depends of course on the age and interests of the children)
1. include a ferry trips whenever possible and convinient, also, take the tram on HK Island
2. go to a live seafood market (our kid is always curious how that stuff looks like before processed)
3. perhaps you can include temples (surprisingly our kid, 6 years old, insisted on visiting those)
4. visit the peak, going there by Bus and returning with the peak tram
5. taking the cable car ride on lantau to visit the buddha statue
6. and, last but not least, HK has beaches (HK island and NT) and a lot of country parks (NT) too.

If you'll like, you can take a walk along women street and temple street. Its basically shopping on the streets with those push cart thingys. Good if you drive a hard bargain.
Another good place is lan kwai fong. Prbably not for kids, but still worth a visit nontheless. If you have extra time, you should also pop over to shenzhen for a couple of days. Its a really short ride and its part of mainland china!

Hong Kong Museum of Art, Disneyland, Victoria Peak, Lantau Island,Ocean Park, Water World, Middle Kingdom, The Central district, Lamma Island, Ten Thousand Buddhas Monastery (Sha Tin), Hong Kong Space Museum, Wet Market
these are the places to see in Hong Kong, Hong Kong is a diverse mixture of characters as a result of long British occupation and a great Chinese influence

The Ocean Park seems nice than the Hongkong Disneyland.

Disneyland is better for kids and it's also less crowded. Ocena Park is visited by many on chinese coming from mainland with big busses and in addition it is all outdoors therefore if you are going in a sticky humid day it might be very uncofortable.
The light shows at 8 o'clock in the evening is pretty nice too, you can watch it from the peak or from the ferry back from Kowloon.
You are going to love HK!
