My E pass got approved and I have one question:

If my last working day at my current company is on Friday, can I start work on the next Monday directly? Assuming my current employer cancel my pass on Friday and at the same time my new employer proceed with the issue of pass.
Does it work that way?

Yes, provided both employer get their acts together. Canceling a pass is easy, normally so it getting the new pass issued as you will be allow to work holding the IPA letter until the physical pass is sent via Courier from MOM to the new employer.

Heard optimum is in mom watch list and not getting EP now. Double check with your HR before you proceed further

I'm curious.. Why is there a need to engage with an agency when the company's hr can just submit your EP application directly themselves?
