Try as I have and failed on many occasions to like the local food whereas as I have successfully in Thailand, Korea, Japan, Viet Nam, etc. I never found anything here I'd look forward to having again.
In my usual rants about this also I mention that the food is left out for more time than I would prefer, rather than freshly prepared. Like those Yong Tau places though I'm probably spelling it wrong.
So with this rat incident, one has to wonder how long they were in the food, and for how long or how many times that food was kept in the back room and brought out again.
While it is possible they got into the food during the day, it's unlikely and it probably happened overnight.

I found Indian food in Singapore good and I haven't noticed this decline in quality over the recent 5-8 years.
On the other hand, for what I call for myself local fusion food, for example, fried venison with chillies (hot-plate), Thai style chicken etc, last time I had it right was like 2007 when we still lived in CCK and used a local, small coffee shop (not existing at this point already). From this point on everything I tried was very so-so, not freshly prepared, not rightly served, tasting not so good.

China street food is the best. Even if the lamb kebobs are really rat meat half the time. Still tastes good.

You mean my impression of the food there? If so I can't comment but hope to some day.

Fish is super expensive. Otherwise from my neighbourhood coffeeshop can still get economy rice for 2 people (1 meat 2 veg) for about $7.
