With its climate controlled environment of sub-20ºC temperature, verdant surroundings of olive trees, herbs, vegetation and plants, as well as an unrivalled view of the Marina Bay skyline, Pollen's lush location is quite hard to beat.Sit at the slightly more casual upper terrace and you'll be rewarded with a romantic view of the Marina Bay skyline and waterfront.Inspired by the restaurant's Mediterranean garden setting in the Flower Dome, the new menu by the East Sussex native will feature modern French cuisine which blends Mediterranean flavours with those of Southeast Asia’s.MUST TRY: Chef Allen’s seven-course dinner tasting menu will feature dishes like Celery and Seaweed, an amuse bouche created with seaweed-infused brown butter and topped with celery sorbet, inspired by the chef’s childhood memories of Eastbourne Pier in East Sussex; Red Prawn Tartare And Tomatoes, a textural dish that showcases multiple parts of red prawns from Sicily, alongside frozen tomato consommé; as well as Poached And Roasted French Duck, done two ways and served with pear, celeriac and anise jus.
